ok so my orginisation is having there national congress next mounth... and im cooking for the 40 members plus guests that will be attending. now i already have a few meals planned out and i know for one meal im making a vegitarian stew. the only problem is that i dont know of any vegitarian stew recipies let alone ones that will be able to feed atleast forty people. does somone have any ideas? i went to a vegan site (yay for being a vegitraian and knowing sites to aid me) but they ever include servings on the site. can anybody help me?

Not sure how great this one is, because I've never made it. All Recipes tends to have some good recipes though, so you may want to try it. You can customize the amount of servings towards the bottom.

Make a vegitarian gumbo! I was given a large plastic container of it about a month ago and it has lasted me since then. Recipe-wise, give me a day or so and I'll see if I can find the one my benefactor used--I know it had chiles, green peppers and tomatoes in it, as well as bunches of other chopped vegetables. Unless spicy is not your thing...?

Ooh, that's a good idea. Easy to make and can feed a ton of people. Could always make it slightly less spicy if you were worried about people liking it, I suppose. Doesn't gumbo also usually have okra in it?

no spicy food... it doesnt matter what i like it has to be cool with 40 people.

I make veg soup all the time (only because I hate canned soup). Uusally a veg broth base with anything I have in the apartment (artichoke hearts, asparagus, tomatoes, spinach, mushrooms, napa cabbage). Add some cayenne pepper (just a tiny bit) and cumin seed. You could add pasta, barley, or sweet potatoes (or regular) as well. Experiment with different spices and such... veg soups are easy to make. *shrug* You could also do a black bean soup... those are really good.
